How it all started

What started out as a lesson in traditional canning, evolved into something special!

It all started when I was young while on a trip visiting family in the
Midwest. Stepping into Grandma's cellar, I was fascinated with all the items
she had preserved from her own garden. The fact that you could see all the
items in the jars and could tell that they were fresh was very appealing.
Compare this to the canned items I'd see in the grocery store, I recognized
very early on that what you see on the label wasn't always what you see or get
when you opened the can.

Grandma's preserved items not only looked great but tasted amazing! I recall
asking my mom if we could start preserving some of our own items when we got
home! Mom agreed, and what evolved was a skill I will cherish for life!

Fast forward several years and a crazy virus hits our great country,
resulting in a lot more time being spent at home. I had been exploring newer
technology in preserving items and did quite a bit of research in freeze-drying
machines. Since the machines aren't cheap, I saved up and finally decided to
purchase my first machine.

Machine finally arrived and I had everything ready to run my first batch! I
loaded the machine and watched my first batch for the next few days. With a ton
of excitement, the anticipation of trying my first freeze-dried item was
finally ready. What came out was simply AMAZING!

I didn't realize that the finished product could be eaten as a healthy,
crunchy chip, much less reconstituted and literally brought back to life.

I spent the next few months trying a little of everything and sampling with
friends and family. Finally, after some encouragement from many of those
friends and family, I decided to take all the necessary steps to get these
items approved and start offering them out to the public.

The response has been overwhelmingly positive, and this journey continues to
evolve!

I want to thank my grandma and mom for the love and expertise to make this
dream become a reality!
